This healthy lemon mousse recipe is to die for! It’s delicious and packed full of healthy fats and fibre.
4 whole lemons, peeled
4 ripe avocadoes, peeled and stoned
Juice of half a lemon
Juice of half an orange
250g pitted dates
2 tablespoons maple syrup (optional – it tastes great with or without it)
Zest of one lemon
Place all ingredients except the lemon zest into a food processor and blend.
Spoon into dessert dishes and chill for 2 hours in the fridge
Garnish with lemon zest when ready to serve
